This recipe was given to me by a friend many years ago. Paul will dispute it's legitimate claim to be a salad - and it certainly doesn't have anything green anywhere near it.  

Great for those situations where you've been asked to vaguely "bring a salad" and you don't want to turn up with greek salad no. 5 again, and there will be many other salad offerings present. 

It is interesting as part of a buffet - and if people don't like it as a salad - well, leave it on the table for dessert! It's wierd - but it works for me.

It uses mandarines, which are plentiful at the moment. (Oh, how I wish our own mandarine trees were more advanced! - can't wait for them to fruit.)

Ingredients

  • 1 small tub of sour cream
  • 1 cup dessicated coconut
  • 1 small tin of unsweetened pineapple pieces (or use fresh) drained
  • segments of 2-3 mandarines, de-seeded
  • 1 cup of chopped white marshmallows
Combine in bowl - serve chilled. (Difficult, huh?)
